Ligo Recipe: "Adobong Fried Sardines over Ensaladang Talong"

Ingredients
1 can of whole and drained Ligo Fried Sardines (Portuguese Style) 155g
8 pieces of charred and peeled Eggplant
2 tablespoons of minced Garlic
3 tablespoons of Vinegar
2 teaspoons of Salt
Salsa
1 cup of diced (without seeds) Fresh tomatoes
1 cup of diced (without seeds) Cucumber
1 cup of diced Red onions
Pinch of Salt and Pepper
Directions:
1.
Char the eggplants in a grill or stove, then peel skin off.
2.
Mince garlic, chop tomatoes, dice cucumber and red onions.
3.
In a bowl, mash grilled eggplant (making sure not to make it too mushy).
4.
Season eggplant with minced garlic, vinegar and salt, and then place on serving plate.
5.
In a separate bowl, add diced fresh tomatoes, diced cucumber, and diced red onions to make the salsa. Add a pinch of salt and pepper.
6.
Add Ligo Fried Sardines (Portuguese Style) 155g on top of eggplant mash.
7.
Top with salsa.
