Ligo Recipe: "Fisherman's Eggs/ Shakshouka"

1 can of chopped (chunks) Premium Ligo Sardines in Tomato Sauce (Spicy/Red) 155g
1 tablespoon of Cooking Oil (for sauteing)
1 piece of julienned White onion
1 piece of julienned Green bell pepper
1/2 tablespoon of Paprika
1/2 tablespoon of Cumin
1/2 cup of drained Canned tomatoes
1/2 cup of room temperature Water
1 teaspoon of Salt
1/2 teaspoon of Pepper
In a sauté pan, heat up cooking oil. Sauté julienned white onion and julienned green bell pepper.
Add paprika and cumin, then bring fire down to low heat. Cook until slightly toasted.
Add canned tomatoes.
Add chopped Ligo sardines, stir gently, then let it stew to reduce sauce. Cover the pan.
While still simmering, quickly transfer to serving bowl. Add 2 raw eggs in the middle of the stew while still hot, and let eggs cook until desired doneness.
Season with salt and pepper to taste.
